Great new sandwich ideas?

It’s my New Year’s Resolution for 2007 to save money and calories by not buying my lunch out when at work, but I’m out of ideas for tasty fillings for sandwiches, baguettes, pittas or wraps which are relatively low-fat and low-cost.

I am a personal chef for some families and I make sandwiches of all sorts:

Take a wrap, smear with 1/4 cup of hummus, add some grated carrots, super thin sliced apple and one slice of turkey. Add lettuce or spinach if you like. Roll it up and cut it in two. Cheap and different!

Chicken salad with a twist. One can of chicken meat is about $3.50 which seems expensive but it’s cheaper than a whole meal out and it will make 3 big sandwiches. Drain the can of chicken, chop up some celery, walnuts, dried cranberries or cherries, add a bit of mayo (even low fat mayo is good in this), add salt and pepper to taste, line a pita pocket with lettuce and fill with this crunchy, unique chicken salad. I love the dried fruit in it. Mmmm.

BLT…You can make a wrap or a sandwich. Spread the bread or the wrap with a bit of mayo, add extra lettuce to protect the bread from the tomato (no soggy sandwiches!) add a few slices of bacon and some sliced tomato.

“salad” sandwich. Mix a bowl or plate of your favorite salad ingredients. Cut them up more than usual, bring a little container of dressing and pita pockets cut in half. When you get ready for lunch, add the dressing to the cut up veggies and then stuff them in the bread pocket. Addicting!

Grilled Ham & Cheese with spicy mustard. Even if you grill it at home in advance, it’s still good if you let it cool on a rack (to help keep it crispy). Then wrap it in a bit of brown paper and then a baggie. It’s different than a fresly grilled sandwich but really tasty.

Chicken caesar wrap. Cut up left over chicken and mix it with a little caesar dressing. Get a wrap, layer with lettuce leaves, toss on some chicken and sprinkle with parmesan cheese. Really strong flavor!

Make a pork wrap. Left over pork from a dinner. Chop it small. cut a little cabbage like you’re making a slaw. Mix in some rice wine vinegar, some toasted sesame oil and a little soy. Toss it with the pork pieces and throw it in a pita or on a wrap with lettuce. Super tangy and “asian” tasting.

Roast beef slices with horseradish mayo! On bread or a wrap. A big strong taste but with just a few slices of meat it’s not that bad for you!
