What is your favorite taco recipe?

Please don’t include any recipes with packets of taco seasoning. Do you prefer pork, chicken, fish, beef, potatoes or squash blossoms? Is it made with with tongue, or brains? Do you add cotija or a crema, or is it best with onions and cilantro?

I’m very picky about my tacos, but I love them. I’m picky about food, period. My fish tacos must be grilled, not fried, and have curtido on them, not coleslaw. Any taco that has potato in it better not contain a french fry if it’s going to be served to me. I can’t stand that! The potatoes must be cubed, dammit, CUBED!!! I prefer my squash blossom done in the Japanese style, so I keep them from hanging around my tacos. I do like pork tacos and chicken tacos, usually with a homemade pico de gallo, a bit of cotja and fresh cilantro, but my hands down favorite taco is just the grilled veggie taco. I dress those very simply – just brush the veggies with olive oil, grill, then toss them with fresh mexican oregano (I grow my own in my herb garden), a bit of salt, maybe some onion and then fold into a tortilla and top with some Duro. OM NOM NOM NOM!

I treat a taco like I treat quiche. I look at the tortilla and think “What do I have that would taste yummy in there?” and go from there. I do like traditional foods from all kinds of regions and often mix and match. So if someone says “that’s not authentic” I just look at them and say “It is authentically eclectic. Are you going to eat that?” ;-p
